Sweet Broccoli Quiche

I made this the other night, hoping to preserve some for a few days' breakfast, and it was gobbled up by my family in 10 minutes!! The peppers, onion and ricotta make it "sweet", and I didn't feel like I was eating eggs... enjoy!

2 eggs
1/2 cup Eggbeaters (using Southwestern Style or Garden Vegetable works best)
1 red or yellow pepper, chopped
1 10 oz package frozen chopped broccoli, thawed & drained
2 T. LF ricotta cheese
1/4 c. LF shredded cheese (your choice)
2 T. minced garlic
1/2 red onion or 2 shallots or 1 small onion, diced
Salt & Pepper (and your preferred spices) to taste

Beat the eggs and eggbeater, then add all the ingredients & mix well. Spray a pie plate with nonstick cooking spray, then pour the mixture in. Bake at 350 for 20-30 minutes, until a knife comes out clean. Makes 6 servings.
