Super Simple One Dish Microwave Breakfast

Ingredients

4-5 fresh mushrooms, washed & sliced (could be done the night before)

1/4 C. egg beaters or one egg beaten
2 slices of LF cheese, cheddar or mozzarella
1/8 tsp. dried cilantro - optional *
s/p to taste
2-3 T. fresh salsa (check labels for no sugar added)

  • You could substitute chives or finely chopped green onion *


Directions

Place the mushrooms in a microwave-safe glass bowl (single serving size), sprinkle with water, cover and microwave for 2 minutes on full power.
Drain the excess liquid.
Add eggbeaters or beaten egg to mushrooms.
Sprinkle with cilantro, salt & pepper. Cover with saran.
Microwave for 2 minutes at 80% power or just until egg mixture is set.

Add fresh salsa before serving, recover with saran for a minute to warm the salsa. ENJOY

Serves one
