Spinach Pancakes

1 10oz pkg frozen chopped spinach, thawed and drained
1 small onion, chopped
8 slightly beaten eggs (or egg beaters that equal 8 eggs)
lf feta
lf sour cream (optional)

Directions

Mix first three ingredients in a large bowl.
Heat 2 tbsp of olive oil in a non stick skillet over med heat.
Pour 1/4 cup of the egg mixture per pancake.
Sprinkle with 1 tbsp low fat or fat free feta cheese pn top of each pancake.
Cook 2 minutes on each side until pancake is golden brown on both sides.
Top with 2 tbsp of low fat or fat free sour cream if desired.
