Flax Muffins Version 3

- 1/2 c. flax seed meal
- 2 T. whey protein powder
- 1 T. unsweetened applesauce [can use smart balance or oil for phase 1 but it's not that much]
- 1 T. smart balance, melted
- 1 egg
- 1/4 c. water
- 2 T. sugar-free syrup (like DaVinci) or water
- 2 T. splenda
- 1 t. baking powder
- 1 t. vanilla extract


  • Chocolate Cinnamon

2 T. cocoa powder
- 1/2 t. cinnamon
- 1 T. mini chocolate chips (optional for phase 2)

  • Cinnamon and Nutmeg -

1 t. cinnamon
- just a pinch nutmeg


Preheat oven to 350-degrees.

Mix dry ingredients, then add wet. Mix and let stand a few minutes to thicken.

Grease muffin cups and spoon batter into them, filling almost full. Bake until toothpick inserted in center comes out clean (I don't keep track of time). Makes: 10 mini.
