Egg Casserole for a Bunch

I sorta adapted this recipe from the Oven Denver Omelette I found on here way back when. I made this for my son's school's Teacher Appreciation Breakfast and everybody went nuts over it! So I decided to post it for y'all. If you have a bunch of people at your house over the holidays, you could make this up the night before, refrigerate it, and just stick it in the oven the next morning. You could also cut this up and freeze individual servings for a quick P1 breakfast!
1 yellow pepper, diced
1 green pepper, diced
½ yellow onion, diced
1 zucchini, diced
12 eggs
1 cup FF or 1% milk
1 cup shredded part-skim mozzarella
1 cup shredded 2% cheddar
8 oz. lean ham or Canadian bacon, diced
1 tsp. salt
1 tsp. ground mustard
½ tsp. pepper
¼ tsp. cayenne
Smart Balance
Preheat oven to 350. Sautee veggies in a Tbsp. or so of Smart Balance until almost done. Beat eggs, milk, & spices in large bowl. Add ham, cheese, and cooked veggies. Stir until combined. Pour into Pam-sprayed 10x13 glass baking dish. Bake uncovered 30-45 minutes. Check for doneness with a fork. I thought this would take about 60 minutes but it got done pretty fast!
