African Peanut Butter Soup

1 1/2 Lbs chicken cut into small chunks (or steak)
1/2 cup of Natural peanut butter (i prefer the chunky)
1 can of stewed tomatoes (use liquid as well)
1 large onion (finely chopped)
1 1/2 cups of cold water
2 cups of hot water
1/3 cup of no sugar added Ragu or any other tomato sauce
1 cup of brown rice (optional. use if in Phase II)
2 Tbs. peanut oil (olive oil will do as well)
2 bay leaves
1 Tbsp. of chili powder (or more if you like it spicy)
Salt and pepper to taste


At medium heat, cook the onion in peanut oil until translucent.
Add the chunks of chicken (or steak) until slightly browned on all sides.
Mix the peanut butter with the cold water until it dissolves and add to chicken and onions.
Stir for about 5 mins.

In the hot water, add the Tomato sauce and mix well. Add this to the chicken mixture. Add the stewed tomatoes, bay leaves, chili powder, salt and pepper.
Now, at this point if you are in P1, just let cook until chicken is cooked, and enjoy!
If in P2, add the rice at this point and lower heat. Cook until rice is done. Serve immediately.
