Lasagna made the easy way!

I’ve become addicted to www.sparkrecipes.com.  I’ve found tons of recipes that either ARE south beach friendly, or easily adaptable.  The following recipe has been on the top 10 forever, so I finally decided to try it.  We really enjoyed it, and definitely will be adding it into regular rotation on our menu planner!  I’ve also included my favorite recipe for preparing cauliflower.  Yum!!  

Skillet Lasagna

Ingredients

1 lb lean ground beef
1 small onion (chopped)
3 Cloves Garlic (minced)
1 can diced tomatoes (undrained)
1-1/4 cup water
8 oz tomato sauce
1 tbsp dried parsley flakes
1 tsp dried basil leaves
1 tsp dried oregano leaves
1 tsp salt
2-1/2 cup broken up whole wheat lasagna noodles
1 cup fat free cottage cheese
1/4 cup fat free grated Parmesan cheese
Dash Basil and Pepper (optional)
1 egg
Shredded fat free mozzarella cheese for garnish

Directions

In a large skillet, brown beef with onions and garlic. Drain.
Add tomatoes, water, tomato sauce, parsley, basil, oregano, and salt.
Stir in uncooked pasta.
Bring to a boil, stirring occasionally.
Reduce heat, cover and simmer for 20 minutes or until pasta is tender.
Combine cottage and Parmesan cheeses.
Mix in the egg.
Sprinkle in basil and pepper to taste.
Drop cheese mixture by rounded tablespoons onto pasta mixture.
Cover and cook for 5 minutes more.
Sprinkle with shredded mozzarella and serve.

NOTE: We added a 15 oz. can of tomato sauce (we like it saucy), and next time I would try adding less lasagna noodles.  It was a little too noodly (yeah, I know that’s not a word!).

A bit about me…

My name is Amanda, and I’ve been doing the South Beach Diet since October 2006.  I’m currently down about 40 pounds, and have another 100 or so to lose.  I love to cook, and spend hours every week looking for new recipes.  I think its important to try a variety of different recipes, and I try to incorporate one new recipe into our menu plan each week.  I’d like to start posting some of the recipes I try here, just for fun, and then I can remember whether or not it was something worth making again.  I hope this will be a useful tool for others looking for something new to try.  Happy eating!
